6 aubergines
3 mix coloured bell peppers
3 onions
1 tbsp of garlic
1 scotch bonnet
1tsp of Cajun seasoning
2 jumbo chicken cube

Directions:
Directions:
Wash and chop all the vegetables in cubes then peel and cut the onions set it a side.

Pour oil into the pot set it on high heat, start Stir-frying onions, garlic, Jumbo chicken cube, scotch bonnet and bell peppers then aubergines for 10-20 mins until the vegetables are soft.

Serve with boil rice or yam
