2-3 tbsp. extra virgin olive oil
1 large onion, minced
5-6 cloves garlic, minced
2 green bell peppers, chopped
1-2 jalapeños, seeded and chopped
1½ lb. tomatillos, husked and quartered
½ bunch cilantro, chopped
1½ tsp. salt
¼ tsp. black pepper
1½ tsp. cumin
4 c. chicken broth
2-3 tbsp. sugar

In a large saucepan, heat olive oil over medium heat. Sauté onions and garlic until tender and fragrant. While onions are sautéing, combine tomatillos, green peppers, jalapeños, and cilantro in a blender. Process until smooth, you may have to add some chicken broth to make it bendable. Pour the tomatillo mixture over onions and garlic, add remaining chicken broth, salt, pepper, sugar, and cumin. Simmer 15 minutes to 1 hour, depending on the consistency you want. If you don’t have time to simmer then turn heat to high and boil until good consistency. Serve with enchiladas, sweet pork burritos, or as a dip with tortilla chips.
