1 large onion
2 c. buttermilk
2 c. all purpose flour
1 tbsp. salt
¼ tsp. cayenne pepper
1 quart canola oil
black pepper to taste

Sauce:
⅓ c. mayo
2 tbsp. sour cream
2 tbsp. horseradish
1 tbsp. ketchup
¼ tsp. paprika
¼ tsp. garlic salt

Directions:
Directions:
Slice onion very thin. Place in baking dish, and cover with buttermilk, soak for at least 1 hour. Combine dry ingredients and set aside. Heat oil to 375º. Grab a handful of onions and toss in flour mixture. Tap off excess and place in hot oil. Fry for a few minutes and remove once golden brown. Repeat until all onions are done. Serve with sauce.
