2 loaves French bread
2 medium onions, chopped
1 c. celery, chopped
1 tbsp. poultry seasoning
½ tbsp. rosemary
½ tbsp. thyme
1¼ c. butter
2 large eggs
2½ c. vegetable or chicken broth
salt and pepper

Directions:
Directions:
The night before: preheat oven to 300º. Tear up bread into bite sized pieces. Spread onto baking sheet and place in oven for 10 minutes. Allow to cool and leave out overnight. (Day of: keep in oven an additional 5-10 minutes).
Finely chop onions and celery, add to medium pan over medium heat with 1 c. butter and spices. Cook until onions are translucent. Remove from heat and cool before placing in fridge.
Day of: preheat oven to 350º, butter a 9x13 dish. Reheat onion mixture over medium heat, add 1½ c. broth, and bring to a simmer. In a small bowl, whisk eggs with 1¼ c. broth. Add onion mix, and egg mix to bread in a large bowl and mix very well. Put in 9x13 pan, top with ¼ c. butter cut into small cubes. Bake covered 45 minutes. Uncover and bake another 30 minutes.
