5 sweet potatoes, pre-baked
(400º 45-60 minutes)
½ c. sugar
2 eggs
½ tsp. salt
¼ c. butter, softened
⅓ c. evaporated milk
1 tsp. vanilla extract

Topping:
½ c. brown sugar
⅓ c. flour
1 tsp. cinnamon
¼ c. butter, softened
½ c. pecans, chopped
1½ c. mini marshmallows

Directions:
Directions:
Preheat oven to 350º. Scoop cooked sweet potatoes into a bowl, and mash (3 cups). Add sugar, eggs, salt, butter, milk, and vanilla. Mix well and pour into 9x13 pan.
In separate bowl, mix brown sugar, flour, cinnamon, and butter with a fork or pastry cutter to create a crumble. Stir in pecans and sprinkle over potatoes. Bake 25-30 minutes. Add marshmallows and broil for about 2 minutes until golden.
