1¼ c mayonnaise
⅓ c sugar substitute
¼ c cider vinegar
¼ tsp celery seed
½ tsp creole seasoning or seasoning salt
¼ tsp ground black pepper
½ head red cabbage, shredded
½ head green cabbage, shredded
1 c carrots, shredded
3 scallions, chopped

Directions:
Directions:
To prepare the coleslaw, whisk together the mayo, sugar substitute, cider vinegar, celery seed, Creole seasoning, and black pepper in a large bowl. Add the cabbage, carrots, and scallions. Toss well to combine and serve.

Serve the finished slaw on top of the pulled pork in a whole wheat bun or try the recipe for pork melt. You can also serve the slaw as a side.
