2 pounds chicken breasts, boneless, skinless, cut into 1" pieces
3 tablespoons cornstarch
1/2 teaspoon black pepper
1 tablespoon oil
1 cup soy sauce
8 tablespoons rice wine vinegar
8 tablespoons ketchup
4 tablespoons sweet chili sauce
4 tablespoons brown sugar
4 garlic cloves, minced
2 teaspoons grated fresh ginger
1/2 teaspoon red pepper flakes
2 cups cashews

Directions:
Directions:
Combine cornstarch and pepper in bag. Add chicken, and shake to coat.

Heat oil in skillet over medium high heat. Brown chicken about 2 minutes on each side. Place chicken in slow cooker.

Combine soy sauce, vinegar, ketchup, sweet chili sauce, sugar, garlic, ginger, pepper flakes, and cashews. Pour over chicken.

Cook on low for 3 to 4 hours.
