1-1/2 cups white sugar
1/2 cup water
5 tablespoons butter
3/4 cup heavy cream
1/2 tsp vanilla extract

1/4 tsp kosher or sea salt (for salted caramel)

Directions:
Place sugar and water in a heavy-bottomed large saucepan set over medium-high heat. Stir just until sugar is dissolve. Bring to a boil and let boil without stirring until mixture is a nice dark golden brown (you can swirl the pan every 30 seconds or so to distribute the heat, but do not stir) this will take several minutes. Remove from heat and wait 30 seconds. Stir in the butter, until melted and combined. Measure cream into a glass measuring up. Add vanilla to the cream. Heat in your microwave for about 2 minutes, until quite hot, but not boiling. Slowly pour the cream into the pan of caramel, stirring constantly, taking care because it will foam up and can bubble over. Beat until smooth. If you want salted caramel topping, sprinkle in the salt and stir to combine. Transfer sauce to a jar with a tight fitting lid and cool completely before refrigerating to keep, or if you want to use it warm, you can use it right away.
