2 lbs. pot roast
2 envelopes enchilada sauce mix
tortillas
shredded cheese
green onions, sliced
1 sm. can black olives, sliced
1 can green chilies

Directions:
Directions:
Mix enchilada sauce envelopes according to package. Pour over roast and cook in crockpot for 6-8 hours on low. Shred beef. Grease a 9x13 baking dish. Dip tortillas in the roast drippings and fill with meat, cheese, and toppings. Roll and place seam side down in baking dish. Bake at 350º for 10 minutes. Add cheese to top and bake another 15 minutes until cheese is melted and enchiladas are warmed through.
