1 lb. hamburger
1 large onion, chopped
1 large green pepper, chopped
1 can Ro-Tel tomatoes (or you can used just diced tomatoes)
1 c. uncooked rice
1-2 tsp. chili powder, to taste
2 tsp. salt
½ tsp. pepper

Directions:
Directions:
Brown hamburger, crumbling as it cooks. Drain (rinse with warm water to remove all the fat) Add onion and pepper and cook until tender. Drain tomato juice into a measuring cup and add water until there is 2½ c. of liquid. Add rice to meat mixture and saute a few minutes. Add liquid and cover and cook over low heat until all the liquid is absorbed and rice is tender. If you need to add more water to get the rice more tender; it is okay to do so.
