Poppy Seed Rolls Recipe

5-6 cups flour
½ cup sugar
1 scant tbsp salt (or less)
2 eggs (for dough)
3 pkg dry yeast or 3 tbsp
½ cup lukewarm water
¾ cup scalded milk
½ cup lard
1 beaten egg for brushing on top of rolls
Poppy seeds to sprinkle on top

Directions:

Scald milk and then add lard and let it melt and cool slightly.
Dissolve yeast in lukewarm water.
Add salt, sugar, cooled milk and slightly beaten eggs to the some of the flour. Add enough flour to make a nice soft dough. Knead lightly.
Let rise until double. Punch down and then form rolls.
After they are formed, place on greased sheets and let rise for 5-10 minutes until they start to look like they are rising. Brush with the egg and sprinkle with poppy seeds.

Bake at 375º until lightly brown. 10 minutes or so.

To make forms: Crescent shaped are made by rolling a circle and then cutting in pie piece shapes and rolling up from the large end. I do the braids by making three long strips and braiding and then cutting into pieces.
