2 pounds Medium-Size Raw Shrimp
6 cups Chicken Broth
1 teaspoon Salt
½ teaspoon Red Pepper (ground)
2 cups Uncooked regular Grits
1 cup Butter (soften)
6 Large Eggs (Lightly beaten)
½ cup each Green and Red Bell Pepper (diced)
6 ribs Celery (chopped)
2 teaspoons Minced Garlic
2 teaspoons Favorite Seafood Seasoning (Old Bay, Tony Chachere’s, Zatarains etc.)
2 cups Dry Breadcrumbs (fine – I use Italian Breadcrumbs)
1 cup Green Onions (chopped)
1 cup Parmesan Cheese (grated)

Directions:
1. Preheat oven to 325 degrees. Peel and de-vein shrimp. I cut mine in half pieces.

2. Bring broth and next two ingredients to a boil in a large saucepan over medium-high heat. Whisk in grits and return to a boil; reduce heat to low and stir in butter. Cover and simmer, stirring occasionally, 10 minutes or until liquid is absorbed. Remove from heat.

3. Stir together eggs and next seven ingredients in a large bowl. Gradually stir about one-half of hot grits mixture into egg mixture; then add egg mixture to remaining hot grits mixture, stirring constantly. Stir in shrimp until well blended. Pour grits mixture into a lightly greased 13-x 9-inch baking dish. Recipe can be halved and will fill a 11-x7-inch baking dish.

4. Bake at 325 degrees for one hour or until mixture is set. Let stand 10 minutes.

We had this at our daughter's wedding back in 2015 and it was delicious! The caters would not share the recipe so I had to tweak several and combine into this one. Our family loves it.
