1 c. flour
½ c. margarine, softened
⅛ tsp. salt
2 tbsp. white sugar
3 eggs, separated
1½ c. white sugar
3 tbsp. flour
⅓ c. whipping cream or half & half
3 c. chopped rhubarb
¼ tsp. cream of tartar
6 tbsp. white sugar

Mix together 1 c. flour, salt, and 2 tbsp. sugar. Cut in margarine. Press into a 9"x9" square pan. Bake 20 minutes at 350º. Separately, mix together egg yolks, 1½ c. sugar, 3 tbsp. flour, whipping cream or half & half. Add in rhubarb. Pour mixture over baked crust and bake 40 minutes at 350º. For meringue topping, beat egg whites with cream of tartar. Add 6 tbsp. of sugar gradually. Spread meringue on dessert. Bake at 350º for 15 minutes additionally.
