1 lb. small tomatoes (10-12)
¼ lemon, thinly sliced
¾ c. water, divided
1⅔ c. white sugar

Directions:
Directions:
Use firm red or yellow tomatoes. Dip them in boiling water then in cold water and remove skins. Boil lemon with ¼ c. water for about 5 minutes, strain out solids. Heat remaining ½ c. water and sugar, simmer for about 5 minutes to make a syrup. To the syrup, add tomatoes and liquid in which lemon was cooked. Boil until tomatoes are clear and syrup thickens slightly. Skim off foam. Ladle into sterilized hot jars, seal. Makes 2-3 half pints.
