2½ Cups Flour
⅔ Cup Sugar
1½ Cups Cornmeal or Corn Flour
4 Teaspoons Baking Powder
1 Teaspoon Salt
2 Cups Milk
½ Cup Vegetable Oil
2 Eggs

Directions:
Directions:
Mix together dry ingredients (flour, sugar, cornmeal, baking powder and salt) in a mixing bowl or your favorite pancake pouring vessel. In a separate bowl or the blender, mix wet ingredients (milk, honey, veggie oil, eggs). Combine wet and dry ingredients and mix until dry lumps are gone. Let sit for 2-3 minutes. Use a medium-hot griddle or frying pan to cook using your favorite pancake making methods. We use a ¼ cup measuring cup to scoop batter onto the griddle, wait for bubbles to form and pop in the batter then flip pancake. Butter generously after removing pancake from griddle. Taste great plain, with honey, butter, syrup or jam. Variation: finely chop up your leftover mush (oatmeal, cornmeal, grits, whatever) and add it to the batter.
