5 c. Flour
½ tsp. Salt
1 c. Butter - softened
1 ¾ c. Sugar
1 tsp. Vanilla
2 c. Buttermilk
2 tsp Baking Soda

Directions:
Directions:
Mix flour and salt and set aside.

Cream together butter, sugar and vanilla.

Mix buttermilk and baking soda and add to sugar mixture. Add flour last and mix well. Refrigerate overnight or until well chilled.

Roll 1/2 of mixture into log and cut 1" slices. Keep other 1/2 chilled until ready to use. Roll slices into pencil shape and form into a figure 8. Place on cookie sheet.

Bake on middle rack at 425º for 6-8 minutes, until they just start to turn a light golden brown.
