8 eggs
1 pint large or small curd cottage cheese
⅓ cup grated Romano or Parmesan cheese
1 tsp. salt
½ tsp pepper
4 small potatoes
1 medium-sized onion
Paprika and chopped parsley (optional)

Directions:
Directions:
In a large bowl, lightly beat the eggs, then stir in the cheeses, salt and pepper. Set aside.
Peel the potatoes and coarsely shred them. You should have about 2½ cups (more is good!). Also coarsely shred the onion. Add the potatoes and onion to the egg mixture and blend well.
Pour the mixture into a greased 9"x13" baking dish. Sprinkle lightly with paprika (or chili powder).
Bake, uncovered, in the middle of a 350º oven for 35 to 40 minutes or until a knife inserted into the middle comes out clean.
Remove from oven and cool for 10 minutes. Sprinkle with parsley if desired.

Note: It is easy to be creative with this, adding other things like mushrooms or asparagus or whatever!
