Ingredients: 2 lb. bottom round steak, trimmed and cut into large squares 1 tsp. salt 1 tsp black pepper 1 tsp. garlic powder 2 Tb. cornstarch 1 Tb. olive oil ½ c. celery, finely chopped ½ c. each of red and yellow bell peppers, diced ½ c. onion, diced 1 can tomato puree (most of the time I used diced tomatoes) 1 c. beef stock

Directions:Season the meat with salt, pepper and garlic powder. place cornstarch into a plastic bag and add meat. Gently toss to coat all meat in the cornstarch. If you need to add a little more at Tb. at the time.
Add olive oil to large skillet or Dutch oven and brown meat on all sides over medium high heat. Stir in peppers, onions and celery. Pour tomatoes and beef broth over the meat, stir, cover and let simmer over medium low heat for at least 2 hours. stirring occasionally.
Serve over cooked rice, mashed pototoes, or egg noodles with a salad. |

Notes: I ate this as a child all the time, but never found a recipe. I discovered this recipe on Pinterest; one summer when the girls came to visit (2016 or 2017?), we had Nan's Cooking School. This was one of the meals we made. They loved it. We had it over noodles because I knew they loved them; I prefer it over rice. Now I make it all the time.
