2 Tbls butter
4 c. thinly sliced zucchini
1 c. chopped onion
2 Tbls dried parsley flakes
½ tsp salt
½ tsp pepper
¼ tsp garlic powder
¼ tsp dried basil
¼ tsp dried oregano
2 eggs well beaten
2 c. shredded Muenster or Mozzarella
1 9" deep dish pie crust

Heat over to 375º In a 12' skillet, melt butter over medium heat. Add zucchini and onions. Cook 8 to 10 min, stirring occasionally, until tender. remove from heat and stir seasonings into the vegetable mixture.

In a large bowl mix eggs and cheese. Add cooked vegetable mixture, stir gently to mix. Pour into an uncooked 9" deep dish pie crust.

Bake 18 - 22 minutes or until knife inserted near center comes out clean. If necessary, cover edge of crust with foil the last 10 min. to prevent excessive browning.. Let stand 10 min before serving.
