Bacon Zucchini Fritters Recipe

4 c (16 oz) shredded zucchini (2 medium)
1 tsp Kosher salt
6 slices bacon
1/4 c all purpose flour
3 cloves garlic, minced
1 lg egg, beaten
1 tsp lemon peel
1/4 tsp ground black pepper
3 T olive oil

sour cream, salsa, crumbled bacon for serving

Directions:
Directions:
1. Place zucchini and 1/4 tsp salt in colander over large bowl, stirring to combine. Let stand at room temperature 20 minutes. Rinse and drain; squeeze dry with paper towels.
2. Cook bacon in large skillet over medium heat, turning occasionally, about 7-9 minutes or until crisp. Remove on paper towel. Let cool and crumble.
3. Combine zucchini, crumbled bacon, flour, garlic, egg, lemon pel, pepper and remaining 1/4 tsp salt in large bowl.
4. Heat oil over medium heaat. Working in batches, spoon 2 T zucchini mixture into skillet, pressing gently to 1/2 inch thickness. Cook, turning once, about 3 minutes each side, or until golden brown. Remove from skillet, drain on paper towels.
5. Serve with sour cream, salsa, and additional crumbled bacon.
