7 or 8 cooked potatoes (best if warm)
1 small onion, chopped
1 stalk of celery, chopped
¼ lb bacon, chopped
⅓ cup vinegar
⅓ cup water
3 tbsp sugar
2 tsp flour & a little water
salt & pepper to taste

Directions:
Directions:
Saute bacon, remove from pan & set aside. Drain off bacon fat, leaving about 3 tbsp in pan. Add vinegar, water, sugar. Bring to a boil. Make a flour paste of 2 tsp flour & a little water; add paste to boiling liquid to make dressing for potatoes.

Pour dressing over potatoes, which have been cubed & seasoned with salt & pepper. Add onion, celery & bacon crisps.

This should be served warm. It can be oven-reheated.

From Barb Novak: This was an essential dish at the reunion. When Aunt Dorothy passed away, we "encouraged" Eileen or Sue to take up the baton. It was a big responsibility but they came through (and we appreciate it!).
