1 c plain yogurt (measure & let sit 10 minutes before making)
2 c whole wheat pastry flour
¼ c splenda
¼ c erythritol
½ c canola oil
2 eggs, room temperature
1 tsp pure vanilla extract
2 tsp baking powder
1 pinch of salt

Preheat oven to 350º F
Spritz loaf pan with canola oil

In a medium bowl, combine erythritol, splenda and eggs. Add oil and vanilla, mix till combined
Add yogurt and stir until completely combined and smooth

In a small bowl, combine flour, salt and baking powder

Add dry ingredients to wet ingredients and mix until just combined

Transfer batter to prepared pan, evenly spreading with a spatula

Bake 33 to 37 minutes, or until toothpick comes out clean

Place on wire rack to cool
