1 large egg
2/3 cup light brown sugar , not packed
1/2 cup plain Greek yogurt
1/3 cup skim milk
1/3 cup unsweetened applesauce
2 heaping Tablespoons honey
1 1/2 teaspoons vanilla extract
1 cup banana , mashed
1 1/2 cups whole wheat flour
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup old-fashioned rolled oats
1/2 cup chopped nuts , optional

Preheat the oven to 400 degrees F. Spray a regular muffin tin with non-stick cooking spray.

In a large bowl, beat the egg and brown sugar. Add the yogurt, milk, applesauce, honey, and vanilla and mix until well combined.

Mash the bananas until no chunks remain. Add to mixture.

In a separate bowl combine the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and oats.

Mix in nuts, if using.

Add the flour mixture to the wet ingredients and stir just until combined. (Don't over-mix!)

Spoon the mixture evenly into the muffin tins, filling each cup all the way to the top (you should be able to use up all the batter.)

Bake at 400 degrees F for about 5 minutes and then reduce heat to 350 degrees and cook for another 12-14 minutes.
