2 yellow squash or zucchini grated
1 cup onion grated
1 egg beaten (or a 1/4 cup egg beaters)
1 tsp. salt
1 tsp pepper
½ cup plus 1 tbs All Purpose Flour
1 tbs vegetable oil.

Directions:
Directions:
Mix all ingredients well. Drop batter using a tbs. into hot oil in a frying pan. Cook about 3 minutes per side or until golden brown. Drain patties on a paper towel.

Makes about 14 pan cakes.
