¼ tsp. Kosher Salt
½ tsp. Ground Black Pepper
4- 4 oz. Flat-Iron or Sirloin Steak (one large, cut into pieces)
1 Lemon - halved
1 tbsp. Minced Onion
1 tbsp. Extra Virgin Olive Oil
1 tbsp. Lemon Juice
½ tsp. Dijon mustard
⅛ tsp. Kosher Salt
4 c. Baby Arugula
¼ c. Parmigiano-Reggiano Cheese -shaved or shredded

Heat pan over medium-high heat. Rub thyme, 1/4 tsp. salt and 1/4 tsp. pepper over steaks. Add steaks to pan; cook 4 minutes on each side or until desired degree of doneness. Remove steaks from pan.

Cut steaks across the grain into thin slices.

Combine 1/4 tsp. pepper, onion and next 4 ingredients (through 1/8 tsp. salt), stirring with a whisk. Drizzle over arugula; toss to coat. Arrange arugula and steak on plate and top each with cheese.
