5 oz. uncooked wide egg noodles
1 Tb. canola oil
1 lb. beef tenderloin, trimmed and cut into 1 inch pieces
¾ tsp. salt, divided
½ tsp. black pepper, divided
1 c. thinly sliced leeks
1 Tb. chopped fresh thyme
2 tsp. minced garlic
1 6 oz. pkg. presliced shiitake mushrooms
1 Tb. all purpose flour
½ tsp. hot paprika
1 c. low salt beef stock
½ c. light sour cream
2 Tb. chopped fresh parsley

Directions:

Cook noodles according to package directions and drain.
Heat oil in a large skillet over high heat, swirl to coat. Add beef, sprinkled with 1/4 tsp.salt and pepper. Cook 4 minutes or until browned, turning to brown on all sides. Remove beef from pan. Reduce heat to med. high. Add leeks, thyme, garlic and mushrooms; saute 5 minutes until lightly browned stirring occasionally. Sprinkle mushroom mixture with flour and paprika; cook 30 seconds, stirring constantly. Add stock; bring to a boil then reduce heat and simmer 2 minutes or until sauce is thickened, stirring frequently. Stir in beef and remaining 1/2 tsp salt and pepper and sour cream. Taste to adjust seasonings. Serve over noodles. sprinkle with parsley.
