Ingredients: 1 ½ tsp. Paprika ½ tsp. Garlic Powder ½ tsp. Dried Oregano ½ tsp. Ground Cumin ¼ tsp. Kosher Salt ¼ tsp. Ground Black Pepper 2 Skinless, Chicken Breast 1 small Onion - diced 1 small Orange or Red Bell Pepper - diced 3 oz. Cheddar or Pepper Jack Cheese - shredded 4 (6-inch) Flour Tortillas ¼ c. Sour Cream

Directions:Cut chicken breast into small bite sized pieces. Combine paprika garlic powder, oregano, cumin, salt and pepper and pour over chicken pieces. Mix well and let sit for 10 minutes.
Cook chicken in skillet with 2 Tbsp. olive oil on medium heat. When chicken is almost cooked through add the vegetables. Continue cooking until vegetables are soft.
Remove chicken and vegetables from skillet and set aside. Wipe out skillet and return to stove.
Place tortilla in pan and put chicken/vegetables on half of the tortilla and top with shredded cheese. Fold tortilla in half over the mixture and lightly brown each side. Serve with sour cream, salsa, guac...or any other sides. |

Notes: Chicken and vegetables can be grilled and then cut into pieces.
I use precooked bagged chicken to save time. I combine all the spices in a large bowl and add precooked frozen chicken, then microwave on med. to thaw the chicken.
I cook vegetables then add chicken mixture to heat and blend everything up.
