1 pound ground beef, cooked and drained
1 envelope taco seasoning
1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles, drained
1 1/2 cups sharp cheddar or Mexican blend shredded cheese
24 wonton wrappers

Directions:

Preheat oven to 375º. Coat standard size muffin tins with nonstick cooking spray.

Combine cooked beef, taco seasoning and tomatoes in a bowl and stir to combine. Line each muffin cup with a wonton wrapper. Add 1.5 tablespoons taco mix. Top with 1 tablespoon shredded cheese. Press down and add a second layer of wonton wrapper (offset wrapper at opposite angle), then taco mix and cheese. (Each cup will have 2 layers of wrapper/taco mix/cheese.

Bake at 375º for 11-13 minutes or until cups are heated through and edges are golden.

Serve with your favorite toppings - fresh tomatoes, guacamole, sour cream, salsa, green onions, etc.
