4 T unsalted butter
6 c pitted frozen or fresh cherries (thaw if frozen)
3 T cornstarch
1/4 tsp Kosher salt
7 T sugar
one 16.3 oz tube refrigerated biscuit dough
1 tsp ground cinnamon
Vanilla ice cream for serving

Preheat oven to 375º
Melt the butter in a 12 in pre-seasoned cast iron skillet over medium heat and swirl around to coat. Pour the butter into a large bowl and reserve.

Toss the cherries with the cornstarch, salt and 3 T of the sugar in a separate large bowl. Spread the cherry mixture in in an even layer in the skillet. Cut the biscuits into quarters and add to the bowl with the butter. Add the cinnamon and remaining 4 T sugar and toss until evenly coated. Top the cherry mixture with the biscuits.

Bake until the biscuits are deep gp;den brown and the cherries are bubbling, 35 to 40 minutes.

Let cool for 5 minutes, then serve with ice cream.
