200g Butter
175g Caster Sugar
200g Self Raising Flour
80g Coconut
3 Eggs
1 tsp Bicarbonate Of Soda
1 tsp Vanilla

120g Strawberry Jam
40g Coconut

Directions:
Directions:
Grease your tray and line with baking paper.

Pre-heat your oven to 160 degrees C (140 if using a fan oven).

Cream together the butter and sugar first, until light and fluffy.

Add the eggs, beating the cake mixture after each egg.

And the vanilla.

Then stir the flour and coconut in gently until all the ingredients have combined into a smooth mixture.

Pour your sponge cake mixture into your prepared baking tray and bake for 25-30 minutes.

Leave in the tin for about 10 minutes before turning out onto a wire rack to finish cooling.

Once the cake has fully cooled down, decorate the top of the cake with the jam and then sprinkle the coconut on top.
