200g plain flour
A pinch of salt
100g chilled butter, cubed
1 medium egg, beaten
1 tbsp olive oil
175g bacon, trimmed and chopped
100g onions, peeled and chopped
2 eggs and 2 egg yolks
250ml of milk
100g of grated cheese
Salt and black pepper

Directions:
Directions:
Preheat the oven to 180ºC
Place the flour, salt, and butter in a bowl and whiz together
Add half the beaten egg and continue to whiz
Bring the mixture together to form a ball of dough
Wrap in clingfilm and leave in the fridge to cool for 30 mins (optional)
Line the quiche tin with the pastry and blind bake for 10 mins
Heat frying pan with olive oil
Cook the bacon, then remove from the heat onto kitchen roll
Gently cook the onions in the same pan for 10 mins
Whisk the eggs in a jug and add the milk, herbs, cheese, bacon, and onions
Mix together and season
Pour into pastry base
Return to oven for 30 – 40 mins
