250g of caster sugar
4 egg whites
1 tsp of white wine vinegar
1 tsp of cornflour
1 tsp of vanilla extract
Fruit and cream for serving

Preheat the oven to 130ºC
Using a pencil, mark out the circumference of a dinner plate on greaseproof paper
Using an electric whisk, whisk the eggs whites in a bowl until they form stiff peaks
Whisk the sugar into the egg whites 1 tbsp at a time
In a separate bowl combine the cornflour, vinegar, and vanilla essence. When it is combined whisk this mixture into the egg whites and ensure it is fully combined
Spread the mixture on to the greaseproof paper and create a crater in the middle
Bake for 1 hour, THEN turn off the oven and let the meringue cool completely, DO NOT OPEN THE OVEN DOOR!
