5 large eggs
150g of caster sugar
150g of plain flour

Directions:

Preheat the oven to 170ºC
Line x2 16cm cake tins with greaseproof paper
Beat eggs and sugar together with an electric whisk until thick, about 10 mins
Very gently fold in the sifted flour with a metal spoon
Spread the mix evenly in two tins and bake for 20 – 25 minutes
After the cakes have cooled cover one with cream and jam and then sandwich the two together. Dust with icing sugar
