Mint Aero Cheesecake Recipe

Digestives
Margarine
600g of Philadelphia cheese
9 oz of icing sugar
3/4 pints of well whipped double cream
1 tsp of mint essence
2 bars of mint aero grated or bashed up
Green food colouring if you want
Mint aero for decoration

Directions:
Directions:
Melt butter in a saucepan
Crush up the digestives and combine with the melted butter
Press this mixture into the base of the tin and put in the fridge
Combine the Philadelphia cheese and sifted icing sugar in a large bowl
Add in the whipped double cream
Add in the mint aero, mint essence, and green food colouring and combine well
Dollop this mixture on top of the digestive base, decorate with more aero and put in the fridge
If you want to make a raspberry cheesecake
Add in half a packet of raspberry jelly, dissolved in as little boiling water as possible
Add in fresh raspberries
Top with crushed raspberry ruffle bars
