For the pastry
225g of plain flour
140g of butter
85g of caster sugar
2 egg yolks
For the filling
3 – 5 cooking or eating apples
4 tbsp of caster sugar

Directions:
Directions:
Preheat the oven to 180ºC
To make the pastry rub in the butter and flour until it resembles breadcrumbs
Then add the sugar and egg yolks and mix until a ball of pastry is formed
Chill the pastry in the fridge for 30 mins
Roll out the pastry and press into the dish
Blind bake the pasty base for 12 mins
Cool slightly and then add the chopped apples, sprinkle with the caster sugar
Cover the top with the remaining pastry and bake for 35 mins
