225g of butter
225g of caster sugar
4 eggs
225g of self-raising flour
0.5 tsp of baking powder
Splash of milk
1 tsp vanilla extract
30 x 20cm cake tin

Directions:
Directions:
Grease and line the cake tin using greaseproof paper
Preheat the oven to 180ºC
Cream the butter and sugar together until light and fluffy, then beat in the eggs, one at a time
Fold in the flour and baking powder, add a splash of milk and the vanilla extract, and mix again
Pour into the lined tin and cook for 25 - 30 minutes
Cool for 5 - 10 minutes and then cover with jam and coconut
Serve with custard
