Banana Bread Recipe

100g of raisins
75ml of Irish Whiskey
250g of self-raising flour
Pinch of salt
1 tsp of baking powder
150g of caster sugar
100g of butter
2 eggs
1 tsp of vanilla extract
475g of bananas (about 4 small ones)
13 x 23cm loaf tin

Directions:
Preheat the oven to 170ºC
Lightly oil and line the loaf tin with greaseproof paper
In a small saucepan, gently simmer the raisins in the whiskey for 2-3 minutes and then remove from the heat
Sift the flour, salt, and baking powder into a large bowl. Add the sugar and butter, using your fingertips, rub it in until the mixture resembles coarse breadcrumbs
Whisk the eggs and vanilla extract in another bowl. Mash the bananas well and add them to the mixture
Make a well in the centre of the dry ingredients and pour in the banana mixture. Gently but thoroughly bring all the ingredients together with a wooden spoon, then pour into the prepared loaf tin
Smooth the top and bake in the oven for 1 – 1.25 hrs. Allow to cool for 5 minutes before removing from the tin
