2 cup diagonally sliced celery
1 med Onion, sliced
1 cup (10 ¾ oz) Condensed Chicken Broth
3 tablespoon Corn Starch
1/8 teaspoon Garlic Powder (optional)
¼ cup Soy Sauce
2 cups cut up (chicken, pork, veal or beef – optional)
2 can (3 oz) each sliced Mushrooms (undrained)
1 can (16 oz) Bean Sprout (rinsed and drained)
1 can Water Chestnut
1 jar (2 oz) diced Pimentos (drained)
2 cup hot, cooked Rice

Directions:
Directions:
Heat celery, onion and broth to boiling in a 3 quart saucepan or Dutch oven; reduce heat and simmer uncovered about 5 minutes or until celery is crisp and tender.

Mix cornstarch and soy sauce until smooth; stir into celery mixture. Cook stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.

Stir in (chicken, pork, veal or beef), mushrooms, bean sprout and pimentos; heat through, stirring frequently. Serve over hot rice.

This recipe was given to me by a good friend, Blanche Peloquin, when my sister, Pauline Fagnant, husband, Peter and I went to visit her and her family in Florida. That was approx. seven years ago.

I tried this recipe with ground beef and both my husband and I didn’t like it as much as when we used other meats.
