Marinade:
½ c. vegetable oil
2 tbsp. rice vinegar
¼ c. sugar
1 clove garlic, minced
½ bunch cilantro, chopped
1 lime, juiced
salt & pepper to taste
4-6 chicken breasts

Salad:
Romaine lettuce, chopped
½ head cabbage, chopped
1 cucumber, chopped
2 carrots, grated
5 green onions, chopped
½ bunch cilantro, chopped
1 red bell pepper, chopped
1 c. peanuts, chopped
-mix in large bowl-

Dressing:
¼ c. rice vinegar
¼ c. Thai sweet chili sauce
1 tsp. sesame oil
½ tsp. sugar
salt & pepper
-mix in jar-

Peanut sauce:
¼ c. peanut butter
2 tbsp. soy sauce*
2 tbsp. water
1 tbsp. rice vinegar
1 tbsp. Thai sweet chili sauce
-mix in jar-

Directions:
Directions:
Marinate chicken for at least 4 hours to overnight. Grill chicken until done or bake at 375º for 25-30 minutes. Slice chicken, serve over salad with Thai dressing and peanut sauce.
