2 tbsp. butter
1 large onion
3 medium apples, peeled, cored and chopped
3 c. chicken broth
2 1/2 c. buttermilk
1 c. peeled, seeded, finely diced cucumber
1 c. finely diced cherry tomatoes
1 c. steamed corn kernels (about 3 ears)
1 1/2 tsp. salt
1/4 c. chopped fresh dill for garnish (optional)
2 tbsp. finely chopped red pepper for garnish (optional)

Directions:
Directions:
Melt butter and saute onions for apprx. 5 minutes.
Add apple and chicken broth.
Simmer until apples are soft, about 15 to 20 minutes.
Puree in a blender, food processor or using an immersion blender.
Add the buttermilk, salt and vegetables.
Refrigerate, covered, until well chilled.
Serve, garnished with dill and chopped red pepper if desired.
