1 Large Chicken Breast
1 Cup Prepared Brown Rice
1 Container of Cream Of Chicken Soup
Tortilla Chips
4 oz Cup Grated White Cheddar Cheese
Salsa
Guacamole

Directions:
Directions:
Preheat oven to 350º
In a Large Skillet, Cook the Chicken Breast until tender.
Use 2 forks to shred the chicken.
Add the cooked Rice and the cream of Chicken soup and bring back up to a simmer
Spread the Tortilla Chips out on a Cookie Sheet
Pour the Rice & Chicken Mixture over the chips
Sprinkle the grated cheese on top
Place into Preheated oven until the Cheese is melted
Broil the cheese until it gets brown - careful it won't take long
Remove cookie sheet and let it sit for minute or two
Serve using a flat spatula
Enjoy
You can garnish this with Salsa and/or Guacamole
