Sauce:
1 tbsp. canola oil
1 tbsp. flour
1 28oz. can enchilada sauce
2 c. chicken broth
½ tsp. salt
½ tsp. pepper
2 tbsp. cilantro

Meat:
1 lb. ground beef
(or other meat of choice)
1 onion, diced
2 4oz. cans green chilies
½ tsp. salt
1 tbsp. minced garlic

Other:
3 c. shredded cheese
½ c. black olives, chopped
½ c. green onions, chopped
½ c. cilantro, chopped
1 package tortillas

Directions:
Directions:
In a large saucepan over medium high heat, add oil and flour, whisk to make a paste. Cook for 1 minute. Add enchilada sauce, chicken broth, cilantro, salt, and pepper. Bring to a boil. Reduce heat and simmer 30 minutes.
Brown meat with onions, salt, and garlic, drain fat, stir in green chilies.
Preheat oven to 350º. Pour ½ c. sauce onto bottom of baking dish. Assemble each tortilla with meat, cheese, olives, green onions, and cilantro. Roll and place seam side down in baking dish. Cover with sauce and sprinkle with cheese. Bake 25-30 minutes. Sprinkle with cilantro and serve.
*Can also use homemade green enchilada sauce instead of this sauce.
