Overnight oats:
1 cup whole rolled oats
1 cup almond milk
drizzle of maple syrup
Strawberry Rhubarb Chia Jam:
2 cups chopped strawberries
1 cup chopped rhubarb
1/2 tsp lemon juice
pinch of salt
2 Tbsp maple syrup
2 Tbsp chia seeds

Directions:
Directions:
To make jam: In a small saucepan over medium heat, simmer the strawberries, rhubarb, lemon juice, and salt for 10 minutes. Stir often so that the fruit does not burn on the bottom. Remove from heat and stir in maple syrup and chia seeds. Let cool to room temperature, 20-30 minutes.
Make the oats: Divide oats into two containers, then pour in almond milk, pinch of salt, and maple syrup. Stir, cover, and chill overnight.
In the morning, assemble oats with a generous scoop of jam.
Can add granola for crunch or additional maple syrup.
