1 dozen eggs, separate yolks and whites
1 glass of sugar (1 cup)
1 glass of cake meal (1 cup)
2 tbsp potato starch
½ grated fresh lemon with zest
½ grated fresh orange with zest

Directions:
Directions:
1. Separate egg yolks from egg whites.

2. Combine sugar and egg yolks. Beat for 2-3 minutes.

3. Sift cake meal. Add potato starch.

4. Add lemon and orange to sugar and egg yolks. Beat together until thick and creamy, and sugar is thoroughly mixed about (about 5-6 minutes).

5. Add sifted cake meal and potato starch mixture a little at a time.

6. Beat egg whites foamy and frothy until peaks form. Mix egg whites with cake mixture.

7. Pour into baking pan lined with wax paper. Oil pan first to hold wax paper in place.

8. Preheat oven on 350º for 2-3 minutes. Bake in oven for one hour (check after 1 hour with a toothpick - if dry it is done. If toothpick is wet, leave in oven and check every few minutes).
