1/3 cup butter
1 yellow onion, chopped
4 cloves of garlic, finely chopped
1/3 cup all purpose flour
2 cups chicken broth
3 cups half and half
3/4 tsp salt
1/2 tsp black pepper
1 tsp chicken bouillon powder
1 tsp mustard powder
1 tsp garlic powder
1 1/2 lbs veggies, cut into small pieces (i.e. broccoli, cauliflower, green beans, etc)
2 large carrots, chopped or grated
2 cups sharp cheddar cheese

Melt the butter in a large pot. Fry onion until fragrant. Add in the garlic and cook for an additional moment. Whisk in the flour and cook for a few minutes or until golden. Reduce heat to medium low and slowly pour in the chicken broth/stock and half and half. Stir well to combine and dissolve the flour into the liquid. Season with salt and pepper, stock powder, mustard pwd, and garlic pwd. Give it a good mix and allow to cook and thicken for about 5 minutes, while stirring occasionally. Add in the veggies and simmer for another 20 minutes until completely tender. Stir in cheese and stir until just combined. Taste test and add in extra salt and pepper if desired.Serve with bread or bread sticks.
