1 dozen boiled eggs
1 lb. red potatoes
1 lb. bacon
1 large jar of Hellman's Mayo** 1/2 fat is okay to use

**(This recipe is based on the original quart size of 32 oz. but mayo is now sold in 30 oz. jars. Use the 30 oz and add a couple of spoonfuls more from another jar. If not, it may be too dry.)

1. Boil eggs. Cool.
2. Boil potatoes. Cool. Peel and chop into bite size pieces. Place in large bowl.
3. While potatoes are cooking, fry bacon. Either cut into small pieces and then fry or fry in strips until crisp and then crumble into bowl.

Pour a little leftover bacon grease over WARM chopped potatoes. Not all of it or it will be swimming in grease. And not over cold potatoes - it won't absorb and you'll have small balls of bacon grease in your potato salad.

4. Dump all mayo into bowl with potatoes and bacon.
5. Peel and chop eggs into bowl - keep 2 out to cut into slices for garnish,
6. Stir all together and refrigerate.
