1 lb. ground turkey
½ onion, sliced
2 tsp. garlic, minced
-brown and drain-
Add half a packet of taco seasoning*
(optional)


1 c. quinoa
-cook per directions-

4 bell peppers
- remove tops and seeds-

1 can diced tomatoes
Cheese (optional)

Directions:
Directions:
Blanch peppers in boiling water for 5-7 minutes. Mix remaining ingredients together and stuff the peppers. Top with cheese. Place in pie pan, cover and bake for 45 minutes at 350º.
