2½ lbs. flank steak
1 bay leaf
1 tsp. salt
¼ c. fresh lime juice
¼ c. fresh lemon juice
3 cloves garlic, diced
½ tsp. black pepper
½ c. olive oil
1 onion, sliced
2 tbsp. Italian parsley

In a large saucepan, combine the flank steak, bay leaf, salt, and enough water to cover steak. Bring to a boil and lower temperature to a simmer. Cook 2 hours, check often, and add water as needed. Remove meat and allow to cool at room temperature. Once cooled, shred the meat, and place in a large plastic bag with lime juice, lemon juice, garlic, and pepper. Allow to marinate for at least 1 hour to overnight in the fridge.
Heat a sauté pan over high heat and add olive oil. Squeeze all the juice out of the meat. Fry the meat for 6-8 minutes. Add the sliced onions, and continue to fry for an additional 10 minutes until the beef is crispy. Garnish with parsley, and serve with black beans, rice and mojo sauce*.
