Cinnamon Candied Pecans Recipe

Ingredients: 2 Egg Whites ¾ cup sugar ¼ tsp salt 1 ¼ tsp cinnamon 4 cups Pecan Halves 6 TBLS Butter (Unsalted Real Butter works best)

Directions:Line baking pan with foil (makes clean up much easier). Do not use a flat cookie sheet with no sides; that will make a huge mess. Cut butter into slices & place on foil covered pan. Place pan in 325 degree oven to melt butter.
Whisk egg whites till ‘foamy’ (not a stiff peak; just foamy). Add sugar; salt & cinnamon. Stir till blended. Add Pecans. Carefully stir with rubber spatula (or plastic spoon) to cover all Pecans with cinnamon mixture.
Pour Pecan mixture onto pan of melted butter. Carefully mix Pecan mixture to coat with melted butter. Spread mixture evenly over pan. Place in 325 degree oven for 10 minutes. Remove pan; carefully turn Pecan mixture over using a metal or rubber spatula (whichever works best for you). Place back in oven for 10 minutes. Repeat turning process/10 minute bake 2 more times. (As ovens vary; you will need to determine how many times you want to repeat this process: typically 3 times total is sufficient)
This is the hardest part: Remove pan from oven. Allow pan to sit and cool for 2 hours. This a crucial step. This is when the ‘candied’ process takes place to give you that scrumptious; crunchy; candy coated texture. Worth the wait!!
After 2 hours; break apart Pecans & enjoy. Store in air tight container. |
