1 ¾ cups bread flour (I used King Arthur bread flour)
1 1/8 tsp Rapid Rise Instant yeast
½ tsp sugar
½ tsp salt
¾ cup water
2 tbsps. extra virgin olive oil

TOPPING
¾ tsp dried Italian herbs (parmesan, oregano, basil)
¼ cup shredded parmesan cheese
¼ cup shredded mozzarella cheese
½ cup crumbled feta cheese

INSTRUCTIONS
1. Combine flour, dry yeast, sugar and salt in a large mixing bowl or stand mixer and stir until blended.
2. Combine water and 1 tbsp olive oil and microwave until very warm but not hot.
3. Add water and oil mixture to the flour mixture.
4. Attach dough hook to the stand mixer and knead for about 7 min.
5. Add any additional water or flour as required to form a soft and smooth dough.
6. Grease an 8 1/2" x 4 1/2" loaf pan with olive oil.
7. For the topping mixture - In a small bowl combine dried Italian herbs, shredded parmesan cheese, shredded mozzarella cheese and crumbled feta cheese and keep it aside.
8. Spread the dough into greased 8 1/2" x 4 1/2" loaf pan. Do not worry if the dough does not spread all the way to the corners. It will once it rises.
9. Cover the loaf pan with a plastic wrap and set aside to rise for about 30 min or until the dough doubles in size.
10. Lightly oil your fingers and gently poke holes about every 1 inch in the dough going nearly to the bottom of the dough.
11. Drizzle with the remaining 1 tbsp extra virgin olive oil .
12. Sprinkle top with the topping mixture as in Step 7.
13. Preheat oven to 375° F.
14. Bake for 30-35 minutes or until golden brown.
15. Remove from the oven and transfer it to a cooling rack.
16. Let it cool slightly. Cut and serve.
